For Poor Knights with Coconut, spread two slices of toast with mango jam and stick together with the other two slices. Cut diagonally into triangles.
Mix milk with egg and 2 tablespoons coconut and vanilla sugar until smooth, dip triangles briefly and place on a plate.
Heat clarified butter in a large frying pan and quickly bake the poor knights on both sides until crispy and light brown, serve still hot sprinkled with a little cinnamon and cocosette.
