For the herb flatbread, put flour in a bowl. Make a well in the center and add crumbled yeast, sugar and water. Mix lightly and let rise for 10 minutes.

Wash, pluck and finely chop the herbs. Add to the flour with salt and oil. Knead everything well.

Let rise for about 40 minutes. Roll out about 16 small patties from the dough. Spread a thin layer of oil on the patties and sprinkle with coarse salt.

Bake at 200°C for about 20 minutes. Put the baking tray on the lowest rack and bake for another 5 minutes.

Serve the herb flatbread lukewarm.

Preparation Tip:

The herb flatbreads will be especially fluffy if you let the dough rest overnight.
