Knead the flour, butter, sugar, salt and egg yolks into a smooth shortcrust pastry and let it rest in the refrigerator for at least 1/2 hour. Then roll out the dough to 1/2 cm thickness, place it on a cake tray, pierce it several times with a fork and bake it in the oven preheated to 180 °C until the surface is just light blond. In the meantime, beat the egg whites and sugar until stiff. Fold in the kroatz berries and spread everything evenly on the short pastry base. Continue baking at 200 °C until the beaten egg whites turn golden brown. Cut the cake into pieces while it is still warm and serve lukewarm.

Preparation Tip:

Instead of using only croatzberries, you can also prepare this delicious dessert with blueberries, blackberries and raspberries, one third each. This fine cake can also be baked in cake form and cut open.
