For the ciabatta, mix yeast with lukewarm water, add sugar and let rise for 10 minutes. Mix flour with olive oil and salt and gradually add the yeast water. Knead until you get a smooth dough that comes off the bowl easily. Cover bowl with plastic wrap and let dough rise in a warm place for 1 hour.

Knead dough briefly on a floured surface, divide into 2 parts, and roll each out into a rectangle about 30 x 15 cm. Fold in the short sides once, and fold the dough lengthwise into a typical ciabatta shape. Press the seams firmly together.

Place on a baking sheet lined with baking paper and let rise for another 20 minutes. Bake in a preheated oven at 210°C on the second rack from the bottom for about 35 minutes. Let the ciabatta cool on a wire rack.

Preparation Tip:

The ciabatta gets a spicy flavor if you mix finely chopped herbs, artichokes or dried tomatoes into the dough.
