A classic Italian recipe for chicken breast provides the base for these sandwiches. Finely chopped lettuce mixed with chopped parsley gives them a fresh touch.

Heat the oil with a third of the butter in a frying pan. Fry the meat for a few minutes over high heat until golden brown, turning occasionally with a wooden spoon to the other side. Extinguish with the Marsala, season with salt and pepper and cook over a low heat for about 5 more minutes until the liquid evaporates and the meat is tender. Remove from the pan and cool.

Meanwhile, cream the remaining butter with the mustard and spread it on half of the bread slices. Divide the lettuce and meat evenly on top, sprinkle with the parsley and top each with a slice of bread. Gently press sandwiches together and cut in half crosswise. Arrange on a platter and bring to the table.
