For the apricot sheet cake, beat yolks, sugar, vanilla sugar and butter until fluffy. Beat egg whites until stiff.

Add flour, baking powder and beaten egg whites. Cut apricots into halves or quarters. Preheat the oven to 190 °C.

Spread the dough on a greased baking tray and cover evenly with the apricot pieces.

Bake cake until golden brown. When the apricot cake has cooled, sprinkle with powdered sugar.
