For the diabetic apricot cake, beat Birkengold and butter until fluffy. Gradually add the egg yolks. Mix flour, baking powder and nuts and fold into the butter mixture together with the beaten egg whites.

Spread the dough on a greased baking tray sprinkled with breadcrumbs (or on a tray lined with baking paper).

Place the apricot halves with the skin on the dough. Bake the diabetic apricot cake for about 40 minutes and serve lukewarm.
