For the asparagus in ham and cream sauce, clean, wash and cook the asparagus in salt, sugar water. Add a small piece of butter to the asparagus water.
Meanwhile, finely chop the onion and fry in a little oil until translucent. Finely chop the ham and fry briefly – add whipped cream.
Add the Eckerl cheese, season with salt, pepper and nutmeg and simmer while stirring constantly. Strain the asparagus and mix with the sauce.
