For the porcini carpaccio, thinly slice very young, fresh porcini mushrooms, place on plate. Blend parsley with olive oil, salt, pepper, vinegar, a little water and a clove of garlic with a magic wand to make a pesto.
Season with a touch of lemon zest. Drizzle over the porcini mushrooms. Sprinkle with shaved fresh parmesan. Serve with toasted brown bread.
