Remove the prawns from the shell and remove the intestines. Remove the seeds from the chili pepper and cut into thin half-rings, finely chop the garlic. Heat the olive oil in a pan and cook the prawns with the chilli, garlic and bay leaf over a relatively high heat for 2 minutes, stirring constantly. Before serving, season with salt and pepper and sprinkle with chopped parsley.
