For the tortellini al prosciutto e panna, cook the tortellini with meat filling in salted water with a few drops of olive oil and a sage leaf until al dente.
Melt the butter in a frying pan, fry the diced raw ham briefly, deglaze with whipping cream and simmer gently for about 5 minutes. Season the sauce with pepper and nutmeg.
